Chinese tea was originally used as a medicine. It was believed to relieve fatigue and refresh the spirit, and it was also highly valued as an ointment for easing the pain of rheumatism. Only from the third century onward did people begin drinking it for enjoyment. In the Tang dynasty it came to be widely cultivated, and output rose dramatically. Today China's tea production accounts for close to one third of the world total.

Chinese teas differ in aroma and color according to how far fermentation has progressed, and they are divided into several types such as green tea, black tea, and oolong tea. Green tea is said to be the origin of all teas, and today varieties native to each locality are grown all over China.

Jasmine tea is the best-known example of scented tea, made by giving tea leaves the fragrance of flowers. Besides jasmine, there is also tea scented with osmanthus. Oolong tea is known to come from Fujian Province. In Japan oolong is the most famous of the Chinese teas and is widely drunk, but in China it is by no means something everyone drinks. Pu'er tea, produced in Yunnan Province, is marked by its distinctive aroma and is said to help flush fat out of the body. It is also said to reduce cholesterol in the blood and improve circulation.

From Japan to Europe and even the Middle East, tea was transmitted everywhere from China. It is no exaggeration to say that Chinese tea is the root of all tea. The pronunciation of the word for tea shows this. Japanese pronounces it the same way as Chinese, as cha. This cha also passed into Hindi, Arabic, Turkish, Russian, Portuguese, and other languages. The form te, from the Fujian dialect spoken in that region, passed into Dutch, German, English, French, and other languages, becoming tea or te.
