What dishes are most often eaten in Japanese homes today? When it comes to Japanese food, foreigners may picture sushi or tempura, but in fact Japanese people eat things like curry rice and gyoza dumplings far more often.

Curry came from India and gyoza from China, but in reality both have taken on a distinctly Japanese flavor. It is said that an Indian visitor to Japan once ate curry rice and asked, "This is delicious. What is this dish called?" For that Indian, the curry rice he had eaten was Japanese food, not Indian food.

Not just curry: if people from each of those countries tasted Japanese ramen, spaghetti, or cold noodles, they would surely notice how much the dishes have changed.

Japanese cuisine has a category called yoshoku, or Western-style food, but that category itself consists of Western dishes greatly adapted after the Meiji Restoration to suit Japanese tastes. Pork cutlets, croquettes, and hamburg steak can by now be called Japanese dishes.

Furthermore, while skillfully taking in foreign food cultures, the Japanese have created many original dishes such as omurice and chilled Chinese-style noodles. In recent years, alongside traditional dishes such as simmered foods and boiled greens, these dishes of foreign origin have appeared on the Japanese table, making the food culture all the richer.

Today, as globalization advances, restaurants serving the cuisines of many countries can be found not only in Tokyo but in many Japanese cities. There are probably not many countries in the world where restaurants from such a variety of nations and regions can be found even outside the big cities and have worked their way into home cooking as well. The Japanese, who love taking in foreign flavors, will surely have added still more kinds of home cooking a few decades from now.

Cut the meat into bite-sized pieces and season it with salt and pepper. Cut the onion into wedges, and cut the carrot and potatoes into irregular chunks of a size that is easy to eat. Finely chop the garlic and ginger.

Heat one tablespoon of salad oil in a thick-bottomed pot, brown the meat over medium heat until the surface is seared, then take it out for the time being.

あらた に おおさじ いち の サラダオイル ニンニク ショウガ を いれ て よわび で いため て から たまねぎ を くわえ て すきとおる まで いためる さらに ニンジン ジャガイモ を くわえ て いため たら に の にく を なべ に もどす

Add another tablespoon of salad oil along with the garlic and ginger and fry them over low heat, then add the onion and fry it until it turns translucent. Add the carrot and potatoes and fry them as well, then return the meat from step 2 to the pot.

さん に みず を くわえ ふっとう し たら あく を とり ざいりょう が やわらかく なる まで よわび で にこむ

Add water to step 3, and once it comes to a boil, skim off the scum and simmer over low heat until the ingredients are tender.

いったん ひ を とめ すこし おんど を さげ て から カレー の ルー を いれ て まぜる ふたたび よわび で にこみ てきとう な とろみ が つい たら ひ を とめる

Turn off the heat for a moment, let the temperature drop a little, then add the curry roux and stir it in. Simmer again over low heat, and turn off the heat once it has thickened nicely.

Serve the rice on a plate and pour the curry over it.

The recipe for Japanese-style curry given above is only one example. Curry rice differs from household to household in how it is made, and its seasoning varies as well.
