Astronauts have to get a great deal of work done in a short period of time, so replenishing their energy is extremely important to carrying out that work. Yet even the act of eating, which is nothing at all on earth, is no longer so simple in space, where there is neither air nor gravity.

In the early 1960s, when humans first went into space, space food was a paste that came in tubes. This, however, was very unpopular with the astronauts. Today, thanks to advances in technology, it has become possible to eat food in space that is quite close to food on the ground. Even so, food that can be taken into space has to meet several conditions. First, since the amount that can be carried up is limited, the lighter it is the better. Second, it must not have a strong smell. After all, the air inside a spacecraft does not circulate, so unlike on the ground, once a smell arises it never goes away. Another important condition is that the food must not scatter. One astronaut, for example, tried to take ramen into space, but it was rejected on the grounds that the soup would fly about. Because there is no gravity in space, there is no telling where scattered soup will end up. If soup were to get into the precision instruments packed tightly inside the spacecraft and cause a breakdown, it could endanger the completion of the mission and even the lives of the crew.

The Japanese astronaut Chiaki Mukai took Japanese foods such as meat and potato stew, inari sushi, and takoyaki with her when she boarded the space shuttle. Even ramen, which had been considered a difficult problem, was approved as space food once it had been processed so that the soup would not scatter.

Yang Liwei, China's first astronaut, ate Chinese dishes aboard the spacecraft Shenzhou 5, including diced chicken stir-fried with cashew nuts, known as gong bao ji ding, and shredded pork stir-fried Sichuan style with chili, known as yu xiang rou si. All of these are traditional Chinese dishes, and as a space food menu they also became very popular in restaurants across China.
